Ingredients
1.5 lbs boneless skinless chicken thighs
4 garlic cloves, minced
1⁄3 cup honey
1⁄3 cup gluten-free soy sauce or tamari
2 tablespoons apple cider vinegar
2 tablespoons cornstarch
2 tablespoons water
1⁄2 teaspoon salt
1⁄2 teaspoon black pepper
1 tablespoon sesame seeds (for garnish)
2 tablespoons chopped green onions (for garnish)
Instructions
1. In a bowl, whisk together honey, gluten-free soy sauce, minced garlic, apple cider vinegar, salt, and pepper.
2. Place the chicken thighs in the bottom of the slow cooker and pour the sauce over them.
3. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken is tender.
4. In the last 30 minutes, mix cornstarch and water in a small bowl and stir into the slow cooker to thicken the sauce.
5. Once done, serve over rice, quinoa, or vegetables.
6. Garnish with sesame seeds and chopped green onions before serving.
Notes
This dish is perfect for meal prep and stores well for several days.
You can substitute chicken breasts, but thighs stay juicier.
