Ingredients

4 large sweet potatoes

6 tablespoons unsalted butter

1 cup light brown sugar

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1/4 teaspoon salt

2 cups mini marshmallows


Instructions

1. Preheat your oven to 375°F. Peel and slice sweet potatoes into 1/2-inch thick rounds, keeping them uniform for even baking.

2. In a medium saucepan, melt butter over medium heat. Stir in brown sugar, cinnamon, vanilla, and salt until dissolved and syrupy.

3. Place sweet potato slices in a greased baking dish. Pour glaze evenly over the potatoes and gently toss to coat.

4. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and continue baking for 15–20 minutes until tender and caramelized.

5. Sprinkle marshmallows over the top and return to oven uncovered for 8–10 minutes, or until marshmallows are golden and puffed.
