Ingredients
1 ½ cups graham cracker crumbs
6 tablespoons unsalted butter, melted
1 cup brown sugar
½ cup unsalted butter (for caramel)
¾ cup heavy cream
1 teaspoon vanilla extract (divided)
½ teaspoon flaky sea salt (plus extra for topping)
1 cup heavy cream (for whipped topping)
2 tablespoons powdered sugar
Instructions
1. Combine graham cracker crumbs and melted butter in a bowl until mixture resembles wet sand. Press into an 8×8-inch baking dish and refrigerate.
2. In a saucepan over medium heat, stir together brown sugar and ½ cup butter until melted and bubbling. Add ¾ cup heavy cream and continue stirring until the caramel thickens, about 5–7 minutes. Remove from heat, stir in ½ teaspoon salt and ½ teaspoon vanilla.
3. Pour the caramel over the chilled crust and spread evenly. Let it cool at room temperature, then refrigerate until firm.
4. In a bowl, whip 1 cup heavy cream until soft peaks form. Add powdered sugar and ½ teaspoon vanilla, whip to stiff peaks.
5. Spread whipped cream evenly over the cooled caramel layer. Sprinkle extra flaky sea salt on top.
6. Chill for at least 3 hours. Cut into squares and serve cold.
