Ingredients
2 tablespoons olive oil
6 cloves garlic, minced
1 teaspoon red pepper flakes
1 can (28 ounces) crushed tomatoes
1 teaspoon salt
0.5 teaspoon black pepper
12 ounces pasta of choice
1 cup reserved pasta water
0.25 cup fresh basil (optional)
0.5 cup grated parmesan cheese (optional)
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add minced garlic and red pepper flakes. Sauté for 2-3 minutes until fragrant.
3. Stir in the crushed tomatoes. Season with salt and black pepper. Simmer for 15-20 minutes.
4. In a separate pot, boil pasta in salted water until al dente. Reserve 1 cup of pasta water.
5. Drain pasta and add it to the skillet with sauce. Add pasta water a little at a time and toss to coat.
6. Let it cook for 2 more minutes to blend flavors.
7. Top with fresh basil and parmesan if using. Serve hot.
Notes
Let the garlic cook slowly to avoid burning.
Reserve enough pasta water—it helps the sauce cling perfectly.
This dish tastes even better the next day after flavors meld.
