Ingredients
1.5 pounds chicken thighs or breasts
1.5 pounds baby potatoes
4 garlic cloves, minced
0.5 cup grated Parmesan cheese
0.25 cup unsalted butter, sliced
1 teaspoon Italian seasoning
0.75 teaspoon salt
0.5 teaspoon black pepper
Instructions
1. Wash and cut the baby potatoes in half if they’re larger than bite-sized. Mince the garlic cloves. If you’re using chicken breasts, cut them into large chunks for even cooking.
2. Add the potatoes to the bottom of the slow cooker, followed by the chicken on top. Sprinkle over the garlic, Italian seasoning, salt, and pepper. Dot the butter around evenly.
3. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours. The chicken should be tender and the potatoes fork-soft.
4. About 20 minutes before serving, sprinkle the Parmesan cheese over everything. Cover again and let it melt into the dish.
5. Give everything a gentle stir, spoon into bowls, and garnish with a bit of extra cheese or chopped parsley if you like.
