Description

Ingredients

2 tablespoons butter

1 small onion, chopped

4 cloves garlic, minced

1.5 pounds boneless skinless chicken thighs

1 teaspoon Italian seasoning

1 teaspoon salt

0.5 teaspoon black pepper

4 cups chicken broth

1 cup heavy cream

1 cup grated parmesan cheese

2 cups fresh spinach (optional)

1 cup cooked pasta or rice (optional)


Instructions

1. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.

2. Stir in the garlic and cook for about 30 seconds until fragrant.

3. Add the chicken thighs, Italian seasoning, salt, and pepper. Sear each side for 4–5 minutes.

4. Pour in the chicken broth and bring to a boil. Reduce to a simmer and cook for 20 minutes.

5. Remove the chicken and shred it with two forks. Return shredded chicken to the pot.

6. Stir in the heavy cream and parmesan. Let simmer for 5 more minutes.

7. Add spinach and cooked pasta or rice if using. Adjust seasoning to taste.

8. Serve hot with bread or your favorite side.

Notes

Use rotisserie chicken for a quicker version.

Add crushed red pepper for a subtle kick.

Swap spinach with kale or leave it out if preferred.
