Description

These Garlic-Parmesan Chicken Bites with Sun-Dried Tomato Cajun Alfredo & Charred Broccolini are the perfect weeknight dinner. Packed with crispy chicken, creamy Cajun Alfredo, and smokey greens, it’s a bold, flavorful meal that’s easy to make and feels gourmet. Perfect for fans of garlic parmesan chicken, Cajun pasta, and quick skillet meals.


Ingredients

1 lb chicken breast

1 tsp garlic powder

1 cup parmesan cheese, divided

1 cup panko breadcrumbs

1 tsp salt

1/2 tsp black pepper

2 eggs, beaten

3 tbsp olive oil

1 cup heavy cream

2 tbsp butter

2 cloves fresh garlic, minced

1 tbsp Cajun seasoning

1/3 cup sun-dried tomatoes (in oil), chopped

1 bunch broccolini

1 tsp lemon juice

1/4 tsp red pepper flakes (optional)


Instructions

1. Cut chicken breasts into bite-sized pieces and season with salt, pepper, and garlic powder.

2. Dredge the chicken in flour, dip in beaten eggs, and coat with a mix of panko breadcrumbs and parmesan cheese.

3. Heat olive oil in a skillet over medium-high heat and fry the chicken bites until golden and cooked through. Set aside.

4. In a separate pan, melt butter and sauté fresh garlic until fragrant. Add Cajun seasoning, pour in heavy cream, and let it simmer.

5. Stir in remaining parmesan cheese and chopped sun-dried tomatoes until the sauce thickens. Adjust salt and spice to taste.

6. Toss broccolini with olive oil, salt, and lemon juice. Char in a hot skillet or grill pan until tender and slightly blistered.

7. Plate by spooning Alfredo sauce as a base, placing chicken bites on top, and adding charred broccolini to the side. Garnish with extra parmesan and red pepper flakes.

Notes

Make sure to fry the chicken in small batches for an even golden crust.

Use sun-dried tomatoes in oil for richer flavor and better texture.

For extra crunch, briefly air-fry the chicken bites before serving.
