Description

This Garlic Parmesan Chicken and Potatoes recipe combines juicy chicken breasts with crispy roasted baby potatoes, all coated in a rich garlic butter and parmesan blend. Perfect for weeknight dinners, family gatherings, or meal prepping, this one-pan dish is packed with flavor, quick to prepare, and always a crowd-pleaser.


Ingredients

2 large chicken breasts

1.5 pounds baby potatoes, halved

2 tablespoons olive oil

3 tablespoons butter, melted

4 garlic cloves, minced

1/2 cup grated parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Preheat your oven to 400°F and line a large baking sheet with parchment paper or foil.

2. Wash and halve the baby potatoes, then toss them in a bowl with olive oil, half the minced garlic, Italian seasoning, salt, and pepper.

3. In another bowl, rub the chicken breasts with the melted butter, remaining garlic, and half the parmesan cheese.

4. Arrange the seasoned potatoes on the baking sheet, placing the chicken breasts between them. Sprinkle the remaining parmesan cheese evenly over everything.

5. Bake for 35 to 40 minutes, stirring the potatoes halfway through, until chicken is cooked and potatoes are golden and crispy.

6. Garnish with chopped parsley and let rest a few minutes before serving.

Notes

For extra crispiness, broil the last 2 minutes of baking.

Use bone-in thighs or drumsticks for even juicier results.

Leftovers reheat best in a skillet to restore crisp texture.
