Description

Ingredients

1 lb mushrooms

4 cloves garlic

1 medium onion

2 tablespoons butter

1 tablespoon olive oil

2 tablespoons flour

2 cups vegetable broth

3/4 cup sour cream

1 tablespoon Dijon mustard

1 teaspoon paprika

1/2 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

10 oz pasta

2 tablespoons chopped parsley


Instructions

1. Heat butter and olive oil in a large skillet over medium heat. Add chopped onions and cook until soft.

2. Stir in garlic and cook until fragrant, about 30 seconds.

3. Add sliced mushrooms and let them brown undisturbed. Stir and cook until golden and moisture evaporates.

4. Sprinkle flour and stir to coat mushrooms evenly.

5. Slowly add vegetable broth while stirring. Add mustard, paprika, thyme, salt, and pepper. Simmer until thickened.

6. Reduce heat and stir in sour cream gently until warmed through. Do not boil.

7. Cook pasta until al dente, drain, and add to sauce. Toss to coat.

8. Sprinkle with chopped parsley before serving.

Notes

Garlic flavor intensifies if minced fresh and added just before mushrooms.

Use a mix of mushrooms (cremini, shiitake) for richer depth.

Add a splash of broth when reheating to restore creaminess.
