Ingredients
1 lb chicken breast
2 tbsp garlic chili oil
2 medium zucchini
8 oz fettuccine pasta
1 cup heavy cream
3/4 cup grated Parmesan cheese
2 tsp Cajun seasoning
3 garlic cloves, minced
2 tbsp butter
1 tbsp olive oil
Salt, to taste
Black pepper, to taste
Instructions
1. Season chicken breast pieces with salt, pepper, and Cajun seasoning.
2. Heat garlic chili oil in a skillet and sear chicken until golden and crispy. Set aside.
3. Use a peeler or spiralizer to create zucchini ribbons. Char them in olive oil over high heat until lightly golden. Remove and set aside.
4. Cook fettuccine in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
5. In a pan, melt butter. Add minced garlic and cook until fragrant.
6. Pour in heavy cream and Cajun seasoning. Simmer and stir in Parmesan cheese until smooth. Thin with pasta water if needed.
7. Toss cooked pasta into the sauce until well coated.
8. Add the seared chicken bites and mix gently.
9. Plate the pasta, top with charred zucchini, and drizzle more chili oil if desired. Serve hot.

Use fresh zucchini and avoid overcooking to maintain texture.

Reserve pasta water to adjust the sauce consistency easily.
