Description

Creamy Cajun Spinach Artichoke Alfredo Pasta with Garlic Chicken Bites is the ultimate comfort food with a spicy twist. Loaded with tender chicken, parmesan, cream cheese, and bold Cajun flavor, this one-skillet dinner is rich, flavorful, and perfect for cozy nights. Great for weeknight meals or indulgent entertaining.


Ingredients

1 lb chicken breast

1 tbsp olive oil

3 garlic cloves, minced

1 tsp salt

1/2 tsp black pepper

1 tbsp Cajun seasoning

2 tbsp butter

1 cup heavy cream

4 oz cream cheese

1 cup grated Parmesan cheese

2 cups baby spinach

1 cup chopped artichoke hearts

10 oz pasta of choice (fettuccine, penne, or gluten-free)


Instructions

1. Cut chicken into bite-sized pieces and season with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden and cooked through. Remove and set aside.

3. In the same skillet, melt butter and sautée minced garlic until fragrant.

4. Pour in heavy cream and add cream cheese. Stir until melted and smooth.

5. Add artichoke hearts and spinach. Cook until spinach is wilted.

6. Stir in grated Parmesan and mix until sauce is thick and creamy.

7. Cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain pasta.

8. Add pasta to the sauce, stirring to coat. Add reserved pasta water as needed to loosen the sauce.

9. Return seared chicken to the skillet and simmer for 2–3 minutes.

10. Serve warm with extra Parmesan or parsley if desired.

Notes

Always cook pasta al dente so it doesn’t become mushy in the sauce.

For extra heat, add cayenne pepper or red pepper flakes with the Cajun seasoning.

This recipe is versatile—swap chicken for shrimp or mushrooms for a different twist.
