Ingredients
400g rigatoni pasta
450g ribeye or sirloin steak
3 tablespoons unsalted butter
4 garlic cloves, minced
1 cup heavy cream
1 cup freshly grated parmesan cheese
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons fresh parsley, chopped (optional)
Instructions
1. Cook rigatoni in salted water until al dente. Reserve 1 cup pasta water and drain.
2. Cut steak into bite-sized pieces. Season with salt and pepper.
3. In a skillet, heat olive oil over medium-high. Sear steak until browned, about 3–4 minutes. Remove and set aside.
4. In the same skillet, melt butter and sauté garlic for 1–2 minutes until fragrant.
5. Pour in heavy cream and bring to a gentle simmer. Add parmesan and stir until smooth. Loosen with pasta water if needed.
6. Add cooked pasta and steak into the sauce. Toss to coat and warm through.
7. Garnish with parsley and black pepper. Serve immediately.
Notes
Use ribeye or sirloin for the juiciest, most flavorful results.
Reserve your pasta water to control sauce thickness.
