Ingredients
1 lb ribeye or sirloin steak
9 oz cheese tortellini
3 tbsp unsalted butter
3 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1 tsp salt
1 tsp freshly ground black pepper
Instructions
1. Pat steak dry and season both sides with salt and pepper. Let rest at room temperature.
2. Boil a large pot of salted water. Cook tortellini according to package instructions. Drain and set aside.
3. In a skillet over medium-high heat, melt half the butter. Sear steak 3–4 minutes per side. During the last minute, add garlic and baste steak with butter. Remove and let rest.
4. Lower heat. In the same skillet, melt the rest of the butter and add garlic if desired. Pour in cream and bring to a simmer. Add Parmesan and stir until smooth.
5. Add tortellini to Alfredo sauce and toss to coat.
6. Slice steak against the grain. Plate with tortellini and drizzle with extra sauce. Top with cracked pepper or Parmesan.
