Description

This garlic butter spaghetti with cheesy Italian sausage and spinach is a comforting, rich pasta recipe perfect for weeknight dinners. Made with mozzarella, parmesan, and Italian sausage, it’s creamy, flavorful, and quick to prepare. Ideal for fans of easy pasta meals and garlic butter sauces.


Ingredients

400g spaghetti

300g Italian sausage (mild or spicy), removed from casing

4 cloves garlic, minced

4 tablespoons butter

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

3 cups fresh spinach

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste


Instructions

1. Bring a large pot of salted water to a boil. Cook the spaghetti until al dente. Reserve 1/2 cup of pasta water, drain, and set aside.

2. In a large skillet over medium heat, cook the sausage, breaking it up with a spoon until browned and fully cooked. Remove and set aside.

3. In the same skillet, melt the butter and sauté the garlic for 1–2 minutes until fragrant and golden.

4. Reduce heat and stir in the Parmesan and mozzarella cheeses until melted. Add the spinach and cook until wilted.

5. Return the sausage to the pan, add the spaghetti, and toss to combine. Add a splash of pasta water if needed to loosen the sauce.

6. Season with salt, pepper, and red pepper flakes to taste. Serve hot with extra Parmesan if desired.

Notes

Use freshly grated cheese for better melting and flavor.

Don’t overcook the garlic to avoid bitterness.
