Ingredients
1.5 pounds baby potatoes
3 tablespoons unsalted butter
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon salt
0.5 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Wash and cut the potatoes in half. Quarter any larger ones for even cooking.
2. Melt butter and olive oil in a saucepan over low heat. Add minced garlic and sauté for 1 minute until fragrant.
3. Preheat oven to 400°F (200°C). Toss potatoes in the garlic butter mixture, then season with salt and pepper.
