Description

This Garden Tortellini Pasta Salad is a fresh and easy pasta salad recipe loaded with cheese tortellini, crisp veggies, and tangy Italian dressing. Perfect for summer meals, picnics, or meal prep, this vibrant tortellini salad is a crowd-pleasing favorite for any occasion.


Ingredients

1 pound cheese tortellini

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup red bell pepper, diced

1/3 cup red onion, finely chopped

1/4 cup fresh basil, chopped

1/2 cup Italian dressing

1/4 cup Parmesan cheese, grated

salt and pepper to taste


Instructions

1. Bring a large pot of salted water to a boil. Add tortellini and cook according to package directions until just tender. Drain and rinse with cool water. Let them cool completely.

2. While tortellini is cooling, prep the vegetables. Dice the cucumber, red bell pepper, and red onion. Halve the cherry tomatoes and chop the basil.

3. In a large bowl, combine the cooled tortellini, vegetables, and fresh basil. Drizzle with Italian dressing and toss gently to coat evenly.

4. Sprinkle grated Parmesan over the top and mix again. Taste and season with salt and pepper.

5. Chill in the refrigerator for at least 30 minutes before serving to let the flavors blend.

Notes

Letting the salad chill before serving enhances the flavor.

Use refrigerated tortellini for the best texture and taste.
