Description

This Frozen Meatball Pot Roast is the ultimate comfort food made easy! Juicy frozen meatballs simmer with potatoes, carrots, and a savory gravy in this one-pot wonder. Perfect for cozy weeknight dinners, this slow cooker meatball roast is hearty, flavorful, and family-friendly.

Ingredients

16 oz frozen cooked meatballs

3 cups beef broth

1 medium onion, chopped

3 large carrots, peeled and chopped

4 medium potatoes, peeled and cubed

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

2 tablespoons tomato paste

1 teaspoon Italian seasoning

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons cold water (if using cornstarch)

Instructions

1. In a large pot or slow cooker, combine beef broth, tomato paste, Worcestershire sauce, Italian seasoning, and minced garlic. Stir well.

2. Add the chopped carrots, potatoes, and onion into the pot.

3. Place the frozen meatballs on top of the vegetables.

4. Cover and cook on low for 6 to 8 hours in a slow cooker or simmer on the stove for about 2 hours, until vegetables are tender and meatballs are heated through.

5. If you prefer a thicker gravy, mix cornstarch with cold water and stir into the pot. Simmer uncovered for 10 more minutes until thickened.

6. Serve hot with your favorite sides like mashed potatoes or crusty bread.

Notes

Let the meatballs sit on top of the vegetables at first to avoid over-softening.

Add mushrooms, celery, or peas if you want to stretch the dish further.

Use low-sodium broth if you’re watching salt intake.
