This Fluffy Honey Cornbread recipe is moist, tender, and naturally sweetened with honey. Perfect as a side dish for chili, BBQ, or soups, it uses fine cornmeal and buttermilk to create a soft, bakery-style crumb. A must-have classic cornbread for any meal or holiday table.
Ingredients
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
2 large eggs
1/4 cup honey
1/4 cup vegetable oil or melted butter
2 tablespoons sugar (optional)
Instructions
1. Preheat your oven to 375°F and lightly grease an 8×8-inch baking dish or cast iron skillet.
2. In a large mixing bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
3. In a separate bowl, whisk together buttermilk, eggs, honey, oil or butter, and sugar if using.
4. Pour the wet mixture into the dry ingredients and stir just until combined. Do not overmix.
5. Pour the batter into the prepared pan and bake for 22 to 28 minutes, until golden and a toothpick comes out clean.
6. Let cool for at least 10 minutes before slicing. Serve warm with butter or extra honey if desired.
Notes
Cornbread texture is best with fine or medium cornmeal.
Add extra sugar if you prefer a sweeter cornbread.
