Description
Fluffy Fruity Whoopie Pies are soft, cake-like sandwich cookies filled with creamy fruit filling. This easy whoopie pie recipe is perfect for porch weather desserts, brunch treats, or summer snacks. Made with buttermilk and real fruit preserves, they’re customizable and fun to make!
Ingredients
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla extract
3/4 cup buttermilk
4 ounces cream cheese or unsalted butter (for filling)
1/2 cup fruit preserves (strawberry, blueberry, peach, or your choice)
1 1/4 cups powdered sugar
Instructions
1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. In a large bowl, cream the butter and sugar until light and fluffy using a mixer.
3. Add the egg and vanilla extract, beating until smooth.
4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
5. Alternate adding the dry ingredients and buttermilk to the wet mixture, beginning and ending with the dry ingredients.
6. Drop tablespoon-sized rounds of batter onto the prepared baking sheets, spacing them about 2 inches apart.
7. Bake for 9 to 11 minutes, until the tops spring back when touched. Cool completely.
8. In a separate bowl, beat the cream cheese (or butter) until smooth. Add in fruit preserves and powdered sugar and mix until light and creamy.
9. Pair cookies by size. Spread or pipe the filling onto the flat side of one cookie and top with a second to form a whoopie pie.
10. Chill for 20 minutes before serving for best texture and flavor.
Notes
These whoopie pies can be customized with any fruit jam or preserve.
To make them more refreshing, chill the pies before serving.
For a tropical twist, add shredded coconut to the filling.
