Description

This Flavorful Creamy Pepperoncini Chicken Skillet is a one-pan meal packed with bold tangy flavor, creamy richness, and tender chicken thighs. Perfect for weeknight dinners, it pairs beautifully with mashed potatoes, rice, or pasta. A low-carb, gluten-free comfort meal with a zesty kick.


Ingredients

6 boneless skinless chicken thighs

1 tablespoon olive oil

3 cloves garlic minced

1 cup chicken broth

1 cup heavy cream

1 cup sliced pepperoncini peppers

2 tablespoons pepperoncini brine

1/3 cup grated Parmesan cheese

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Pat chicken thighs dry and season with salt and pepper.

2. Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden, about 5–6 minutes per side. Remove and set aside.

3. In the same skillet, add minced garlic and cook for 30 seconds until fragrant.

4. Pour in chicken broth and deglaze the pan, scraping up the browned bits.

5. Stir in heavy cream, pepperoncini slices, and brine. Simmer for 3–5 minutes to slightly reduce.

6. Return chicken to the skillet, reduce heat to low, and simmer for 10 minutes until cooked through.

7. Add Parmesan cheese and stir until melted.

8. Taste and adjust seasoning. Serve hot with sides of choice.

Notes

This dish is best made with chicken thighs for extra juiciness.

For a spicier version, use hot pepperoncini and more brine.

Leftovers reheat beautifully with a splash of cream or broth.
