This Flavor-Packed One-Pot Mushroom Rice is an easy and comforting meal featuring savory mushrooms, aromatic garlic, and fluffy rice all cooked in one pot. Perfect for weeknight dinners or meal prep, it’s a cozy vegetarian dish loaded with flavor. Great as a main or side dish!
Ingredients
1 tablespoon olive oil
12 ounces mushrooms, sliced
1 small onion, chopped
3 cloves garlic, minced
1 teaspoon fresh thyme leaves (or ½ tsp dried)
1 cup long grain white rice
2 cups vegetable broth
¾ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped parsley (for garnish)
Instructions
1. Heat olive oil in a large pot over medium heat. Add sliced mushrooms and sauté until browned and fragrant, about 6–8 minutes.
2. Add chopped onion and cook until translucent, about 3 minutes. Stir in garlic and thyme, cooking for another minute.
3. Stir in the rice and toast it in the pot for 2 minutes, stirring to coat it with the oil and flavors.
4. Pour in vegetable broth, salt, and pepper. Bring to a simmer.
5. Reduce heat to low, cover, and let cook for 18 minutes or until rice is tender and liquid is absorbed.
6. Remove from heat and let sit for 5 minutes, still covered.
7. Fluff with a fork, garnish with parsley, and serve warm.
Notes
This recipe is naturally vegetarian but can be made vegan by using vegan broth.
Add a drizzle of truffle oil or a sprinkle of parmesan for extra richness.
You can mix different mushrooms for more complex flavor and texture.
