Ingredients

2 pounds chicken breasts or thighs

1 cup uncooked long-grain white rice

1 can (10.5 oz) cream of chicken soup

2 cups chicken broth

1 ½ cups frozen mixed vegetables

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper


Instructions

1. Place the chicken at the bottom of a greased crockpot and season with garlic powder, onion powder, salt, and black pepper.

2. In a mixing bowl, whisk together cream of chicken soup and chicken broth until smooth.

3. Pour the soup mixture over the seasoned chicken in the crockpot.

4. Sprinkle uncooked rice over the mixture, then add frozen mixed vegetables.

5. Gently stir to slightly combine, being careful not to disturb the base too much.

6. Cover and cook on low for 5 to 6 hours or high for about 3 hours, until chicken is fully cooked and rice is tender.

7. About 15 minutes before serving, sprinkle shredded cheddar cheese over the top, cover again, and let the cheese melt.
