Ingredients

6 large eggs

1 tablespoon olive oil

1 cup diced bell peppers

1/2 cup diced onions

1 cup cooked breakfast sausage or bacon

1 cup shredded cheddar cheese

6 large flour tortillas

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon butter (optional for cooking)


Instructions

1. Chop the bell peppers and onions. Cook sausage or bacon until done, then set aside.

2. Heat olive oil in a skillet. Sauté the peppers and onions until soft and lightly browned.

3. In a bowl, whisk eggs with salt and pepper. Pour into skillet and cook on low until softly scrambled.

4. Warm tortillas slightly to make them easier to roll.

5. Layer eggs, veggies, meat, and cheese onto each tortilla.

6. Fold in the sides and roll up each tortilla tightly into a burrito.

7. Wrap each burrito in foil or parchment. Freeze or refrigerate.

8. To reheat, microwave for 2–3 minutes or toast in a skillet until golden.
