Ingredients
1 tablespoon olive oil
4 large bell peppers
1 pound ground beef
1 cup cooked rice
1 small onion, chopped
2 cloves garlic, minced
1 cup diced tomatoes
1 cup tomato sauce
1 teaspoon Italian seasoning
0.5 teaspoon salt
0.5 teaspoon black pepper
1 cup shredded cheddar cheese
Instructions
1. Preheat your oven to 375°F (190°C).
2. Cut the tops off the bell peppers, remove the seeds and membranes, and brush the outsides with olive oil. Place them upright in a baking dish.
3. In a skillet over medium heat, cook the ground beef until browned.
4. Add chopped onion and minced garlic, and sauté until fragrant and soft.
5. Stir in the cooked rice, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
6. Spoon the filling into each prepared bell pepper, pressing down gently to pack them.
7. Top with shredded cheddar cheese.
8. Cover the baking dish with foil and bake for 30 minutes.
9. Remove foil and bake an additional 10 minutes until the cheese is melted and golden.
10. Let cool for a few minutes before serving.
Notes
Use a mix of bell pepper colors for added visual appeal.
Substitute ground turkey or quinoa for a lighter version.
Make a double batch and freeze some for easy future meals.
