Description

This Easy Spinach and Cottage Cheese Breakfast Casserole is a protein-packed, low-carb breakfast idea perfect for meal prep or weekend brunch. Made with eggs, spinach, and cottage cheese, it’s gluten-free, wholesome, and incredibly satisfying. A healthy breakfast casserole that’s both comforting and delicious.


Ingredients

6 large eggs

1 cup cottage cheese

2 cups spinach (fresh or thawed frozen)

1 cup shredded mozzarella cheese

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder


Instructions

1. Preheat your oven to 375°F and grease a baking dish.

2. If using frozen spinach, thaw and squeeze out moisture. If using fresh, sauté until wilted.

3. In a large bowl, whisk together eggs, cottage cheese, mozzarella, garlic powder, onion powder, salt, and pepper.

4. Stir in the prepared spinach evenly.

5. Pour the mixture into the baking dish.

6. Bake for 35–40 minutes or until set in the center and golden around the edges.

7. Let rest for 5 minutes before slicing and serving.

Notes

This casserole can be made ahead and reheated throughout the week.

You can freeze individual portions for quick weekday breakfasts.
