Description

This Easy Slow Cooker Chicken Dinner recipe is a comforting, one-pot meal made with tender chicken, carrots, potatoes, and herbs. It’s perfect for busy weeknights or cozy weekends. A wholesome, hearty chicken recipe that’s great for families and meal prep.


Ingredients

4 to 6 chicken thighs or breasts

4 carrots, peeled and sliced

4 medium potatoes, chopped

1 onion, sliced

3 cloves garlic, minced

2 cups chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil (optional)


Instructions

1. Peel and slice the carrots, chop the potatoes, and slice the onion. Mince the garlic.

2. Place the potatoes and carrots at the bottom of the slow cooker. Add onion and garlic on top.

3. Place the chicken over the vegetables. Sprinkle with salt, pepper, thyme, and rosemary.

4. Pour the chicken broth over the entire mixture, ensuring it mostly covers the chicken.

5. Cover and cook on low for 6–7 hours or high for 3–4 hours until the chicken is fully cooked and the vegetables are tender.

6. Serve as whole pieces or shred the chicken and mix with the veggies and broth.

7. Garnish with fresh herbs if desired and enjoy warm.

Notes

Let the dish cool completely before freezing for later use.

Use baby potatoes for extra creaminess and no peeling needed.

Swap out herbs depending on preference—sage or oregano also work great.
