Description
This Easy One Pot Mexican Rice Casserole is a flavorful and cheesy one-pan dinner made with ground beef, rice, diced tomatoes, and taco seasoning. A perfect weeknight casserole recipe that’s hearty, quick, and uses pantry staples.
Ingredients
1 pound ground beef
1 cup long-grain white rice
1 small onion, chopped
2 cloves garlic, minced
1 bell pepper, diced
1 can (10 oz) diced tomatoes with green chilies
2 cups beef broth
2 tablespoons taco seasoning
1 ½ cups shredded cheddar cheese
1 tablespoon olive oil
Salt and pepper to taste
Instructions
1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, seasoning with salt and pepper. Drain excess grease if needed.
2. Add chopped onion, garlic, and diced bell pepper. Cook for 4-5 minutes until softened and fragrant.
3. Stir in rice and taco seasoning until everything is evenly coated.
4. Pour in diced tomatoes with green chilies and beef broth. Stir, bring to a simmer, then cover and reduce heat to low. Cook for 18-20 minutes or until rice is tender.
5. Remove lid, gently stir, and sprinkle shredded cheddar cheese on top. Cover again and let cheese melt for 3-5 minutes.
6. Garnish with sour cream, cilantro, jalapeños, or avocado if desired. Serve hot.
Notes
Let it rest for 5 minutes after cooking so the rice fully absorbs the flavors.
Swap ground beef with ground turkey or chicken for a lighter version.
Add black beans or corn for extra texture and flavor.
