Ingredients
1 cup warm water
2 1/4 teaspoons instant yeast
2 tablespoons sugar
3 1/2 cups bread flour
1 1/2 teaspoons salt
1 tablespoon barley malt syrup or honey (for boiling water)
Toppings of choice (e.g., sesame seeds, poppy seeds, everything seasoning)
Instructions
1. Combine bread flour, warm water, instant yeast, sugar, and salt in a mixing bowl. Knead until the dough is smooth and elastic.
2. Cover and let rise for 1 to 1.5 hours, until nearly doubled.
3. Punch down the dough and divide into 8 pieces. Shape into balls, poke a hole in each, and stretch into rings.
4. Place on a parchment-lined tray, cover, and refrigerate for at least 6 hours or overnight.
5. Preheat oven to 425°F. Bring a large pot of water to a boil and stir in barley malt syrup or honey.
6. Boil bagels 30–60 seconds per side. Return to tray and add toppings.
7. Bake for 20–25 minutes until golden brown. Let cool slightly before serving.
Notes
This dough is stiffer than most bread doughs—don’t add extra water.
You can freeze boiled (unbaked) bagels for later baking.
Toppings should go on immediately after boiling so they stick well.
