Description

Easy Keto Strawberry Cheesecake Bars are the perfect low-carb dessert featuring a creamy cheesecake layer swirled with fresh strawberries over a buttery almond flour crust. Gluten-free, sugar-free, and perfect for keto diets, these bars offer a satisfying treat without the guilt.


Ingredients

1 ½ cups almond flour

5 tablespoons butter, melted

⅓ cup powdered keto sweetener (for crust)

16 ounces cream cheese, softened

½ cup powdered keto sweetener (for filling)

2 large eggs

1 teaspoon vanilla extract

½ cup fresh strawberries, pureed


Instructions

1. Preheat the oven to 325°F and line an 8×8-inch baking dish with parchment paper.

2. In a bowl, mix almond flour, melted butter, and ⅓ cup powdered sweetener. Press into the dish to form a crust.

3. Bake the crust for 10–12 minutes or until lightly golden. Let it cool slightly.

4. Puree fresh strawberries in a blender. For a thicker swirl, simmer puree on the stove for a few minutes to reduce.

5. In a large mixing bowl, beat softened cream cheese with ½ cup powdered sweetener until smooth.

6. Add eggs one at a time, mixing thoroughly after each addition. Stir in vanilla extract.

7. Pour cheesecake mixture over the cooled crust.

8. Spoon the strawberry puree on top in small dollops and swirl with a toothpick or knife.

9. Bake for 25–30 minutes until the center is set but slightly jiggly.

10. Cool completely at room temperature, then refrigerate at least 3 hours before slicing into bars.

Notes

These bars are best served chilled for a creamy texture.

Use powdered sweetener for a smooth filling—granular types may feel gritty.

You can swap strawberries with raspberries or blueberries for variety.
