Description

This Easy Homemade Blackberry Clafoutis is a classic French dessert made with fresh blackberries baked in a rich, custard-like batter. Ingredients

1 tablespoon butter

3 large eggs

1/2 cup granulated sugar

1 cup whole milk

1/2 cup heavy cream

1/2 teaspoon salt

1 1/2 teaspoons vanilla extract

1/2 cup all-purpose flour

1 1/2 cups blackberries

1 tablespoon powdered sugar (optional, for dusting)


Instructions

1. Preheat your oven to 350°F (175°C). Generously butter a 9-inch round baking dish or skillet and set aside.

2. In a large mixing bowl, whisk together the eggs and granulated sugar until well combined and slightly frothy.

3. Add the milk, heavy cream, salt, and vanilla extract. Whisk again until the mixture is smooth.

4. Sprinkle in the flour and whisk until no lumps remain and the batter is silky.

5. Scatter the blackberries evenly across the buttered baking dish.

6. Pour the batter gently over the berries, letting a few poke through the top.

7. Bake in the center of the oven for 40 to 45 minutes, or until puffed, golden at the edges, and just set in the middle.

8. Let cool for 10 to 15 minutes. Dust with powdered sugar before serving if desired. Serve warm or chilled.

Notes

This dessert is best served the day it’s baked, slightly warm or at room temperature.

You can use frozen blackberries, but make sure they’re fully thawed and drained to avoid extra moisture.

A dusting of powdered sugar adds a beautiful finish, especially if serving to guests.
