Ingredients

1 ½ lb boneless skinless chicken breasts, cut into 1-inch pieces

½ cup finely grated Parmesan cheese, plus 2 tbsp for serving

4 cloves garlic, minced, divided

2 tbsp olive oil, for searing

2 bunches broccolini, trimmed

1 tbsp olive oil, for broccolini

2 tbsp unsalted butter

½ cup sun-dried tomatoes, finely chopped (oil-packed, drained)

1 ¼ tsp Cajun seasoning

1 cup heavy cream

¾ tsp kosher salt, divided

½ tsp black pepper, divided

1 tbsp lemon juice, optional for brightness


Instructions

1. Prep the chicken. Pat chicken dry, season with ½ tsp salt and ¼ tsp pepper, then toss with ½ cup Parmesan and half the minced garlic.

2. Sear the chicken. Heat 2 tbsp olive oil in a large skillet over medium-high. Cook chicken in a single layer until golden and cooked through, 5 to 7 minutes. Transfer to a plate.

3. Char the broccolini. Add 1 tbsp olive oil to the same skillet. Cook broccolini 2 to 3 minutes per side until lightly charred and crisp-tender. Season with a pinch of salt and pepper. Transfer to a plate.

4. Make the Cajun Alfredo. Lower heat to medium. Add butter, remaining garlic, and sun-dried tomatoes; sauté 1 minute. Stir in Cajun seasoning, then pour in heavy cream. Simmer 2 to 3 minutes until slightly thick. Season with ¼ tsp salt and ¼ tsp pepper.

5. Finish and serve. Return chicken to the pan and toss to coat. Add lemon juice if using. Plate with charred broccolini, sprinkle remaining 2 tbsp Parmesan, and serve hot.

Notes

Use chicken thighs if you prefer—same method, a touch juicier.

If the sauce thickens too much on reheating, loosen with a splash of cream or milk.

Adjust Cajun seasoning to taste; different blends vary in heat.
