Description

A flavorful and easy feta and spinach casserole made with creamy cottage cheese, fresh or frozen spinach, and eggs for the perfect vegetarian bake. Ideal for weeknight dinners or meal prep, this healthy casserole is rich in protein and Mediterranean-inspired ingredients.


Ingredients

3 cups spinach (fresh or frozen, squeezed dry if frozen)

1 cup feta cheese, crumbled

3 large eggs

1 cup cottage cheese

2 cloves garlic, minced

1 teaspoon dried oregano or dill

0.5 teaspoon salt

0.25 teaspoon black pepper

1 tablespoon olive oil (for greasing dish)


Instructions

1. Preheat the oven to 375°F and lightly oil a baking dish.

2. In a large mixing bowl, combine spinach, crumbled feta, cottage cheese, eggs, minced garlic, herbs, salt, and pepper. Mix well.

3. Spoon the mixture into the prepared baking dish and spread evenly.

4. Bake for 35 to 40 minutes, or until the top is golden and the casserole is set.

5. Let it cool for 5–10 minutes before slicing and serving.

Notes

This casserole works great with both fresh and frozen spinach.

For a more herb-forward taste, mix dill and oregano together.

Want it cheesier? Add a sprinkle of mozzarella on top before baking.
