Ingredients
12 Medjool dates pitted
1/2 cup creamy peanut butter
1/3 cup roasted peanuts
1 cup chocolate chips
1 tablespoon coconut oil
1 teaspoon vanilla extract
1/4 teaspoon sea salt
Instructions
1. Slice each date lengthwise to create a pocket without cutting all the way through and remove pits if needed.
2. Gently press dates open and flatten slightly to form a base.
3. Spoon peanut butter inside each date evenly.
4. Press roasted peanuts into the peanut butter layer so they stick well.
5. Add chocolate chips and coconut oil to a microwave safe bowl and heat in short intervals stirring until smooth.
6. Stir in vanilla extract into the melted chocolate.
7. Dip each stuffed date into the melted chocolate or spoon chocolate over to coat fully.
8. Place coated dates on parchment paper and sprinkle lightly with sea salt.
9. Refrigerate for about 20 minutes or until chocolate is firm.
10. Serve chilled or slightly softened for best texture.

Use soft Medjool dates for the best caramel like texture and natural sweetness.
Natural peanut butter works but stir well so oils are fully incorporated.
