Ingredients

9 oz cheese tortellini

2 cups cooked shredded chicken

1 cup cubed Velveeta cheese

1 cup shredded mozzarella cheese

3 garlic cloves, minced

1 cup heavy cream

1 cup chicken broth

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped parsley (optional)

Instructions

2. Pour in the chicken broth and heavy cream. Stir in cubed Velveeta cheese and let it melt into a smooth sauce.

3. Add the cooked shredded chicken and cheese tortellini. Reduce heat and let simmer for 5 to 7 minutes, stirring occasionally, until tortellini are tender.

4. Sprinkle shredded mozzarella over the top, cover the pot, and remove from heat. Let sit for 2 to 3 minutes until cheese is melted and gooey.

5. Season with salt and pepper to taste. Garnish with parsley and serve warm.

Notes

This recipe is best served fresh but makes excellent leftovers.

Use refrigerated tortellini for best texture and quicker cooking.

Add a splash of chicken broth when reheating to restore creaminess.
