Description

This easy crack chicken casserole is a creamy, cheesy baked dish made with shredded chicken, bacon, ranch seasoning, and cheddar. Ingredients

2 cups shredded chicken

8 oz cream cheese (softened)

1 packet ranch seasoning mix

1 ½ cups shredded cheddar cheese

6 slices cooked bacon (crumbled)

½ cup sour cream

¼ cup chopped green onions

3 cups cooked egg noodles or pasta (optional)


Instructions

1. Preheat your oven to 350°F and grease a 9×13 inch baking dish.

2. In a large mixing bowl, combine the cream cheese, sour cream, and ranch seasoning until smooth.

3. Stir in the shredded chicken, bacon, green onions, and half of the cheddar cheese.

4. If using noodles or pasta, fold them into the mixture.

5. Spread the mixture evenly into the prepared baking dish.

6. Top with the remaining cheddar cheese and extra bacon bits if desired.

7. Bake uncovered for 25 to 30 minutes, or until cheese is bubbling and golden.

8. Let it rest for 5 minutes before serving.

Notes

This casserole can be made ahead and refrigerated before baking.

For a spicier version, add chopped jalapeños or hot sauce to the mix.
