Ingredients
12 cloves garlic
1 tablespoon olive oil
1 medium yellow onion
1 teaspoon thyme (dried or 1 sprig fresh)
1 bay leaf
4 cups vegetable broth
2 egg yolks
4 slices crusty bread
0.5 teaspoon salt
0.25 teaspoon black pepper
Instructions
1. Peel garlic cloves and thinly slice onion. In a large pot, heat olive oil over medium heat.
2. Add garlic and onion. Sauté gently for 10 to 12 minutes until softened and fragrant, not browned.
3. Add thyme, bay leaf, and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 to 35 minutes.
4. If desired, blend the soup until smooth using an immersion blender, or leave it rustic.
5. In a small bowl, whisk egg yolks. Slowly temper them with hot soup, then return mixture to the pot.
6. Stir well to combine. Remove bay leaf and season with salt and pepper.
7. Serve hot with crusty bread on the side or soaked in the bowl.
Notes
Use fresh, whole garlic cloves for best flavor.
Whisking in the egg yolks adds richness without making it heavy.
You can blend the soup for a creamy version or keep it rustic with garlic chunks.
