Ingredients
2 boneless skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
1 cup all-purpose flour
2 large eggs
1 cup Italian-style breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup olive oil
1 1/2 cups marinara sauce
1 1/2 cups shredded mozzarella cheese
2 tablespoons chopped fresh basil (optional)
Instructions
1. Slice chicken breasts in half horizontally to create thin cutlets and pound to even thickness if needed. Season with salt and pepper.
2. Set up three bowls: one with flour, one with beaten eggs, and one with a mix of breadcrumbs and Parmesan. Dredge chicken in flour, then egg, then breadcrumb mixture, pressing to adhere.
3. Heat olive oil in a skillet over medium heat. Fry each cutlet for 3 to 4 minutes per side until golden and cooked through. Transfer to a paper towel-lined plate.
4. Preheat oven to 425°F (220°C). Spread a layer of marinara in a baking dish. Add chicken, spoon more sauce on top, and cover with mozzarella.
