Ingredients

1 tablespoon butter

1 cup chopped onion

1 cup sliced carrots

1 cup chopped celery

4 cups chicken broth

1 can cream of chicken soup (10.5 oz)

3 cups cooked shredded chicken

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme (optional)

1 can refrigerated biscuit dough (8-count)


Instructions

1. Melt butter in a large pot or Dutch oven over medium heat.

2. Add onion, carrots, and celery. Sauté until softened, about 5 to 7 minutes.

3. Pour in chicken broth and cream of chicken soup. Stir well to combine.

4. Add shredded chicken to the pot and season with salt, pepper, and thyme if using. Simmer for 5 minutes.

5. Cut each biscuit into 4 small pieces and gently drop into the simmering broth.

6. Lightly press biscuits down into the liquid. Do not stir too much.

7. Cover the pot and reduce heat to low. Let the biscuits steam for 15 minutes until cooked through.

8. Serve hot and enjoy!

Notes

This recipe works great with rotisserie or leftover chicken.

You can swap canned biscuits for homemade dough if preferred.
