Description

These Easy Cheesy Ground Beef Enchiladas are the ultimate Tex-Mex comfort food, made with seasoned beef, melty cheese, and zesty enchilada sauce. Perfect for weeknight dinners, this enchilada recipe is quick, hearty, and endlessly satisfying. Great for meal prep, family meals, or freezer-friendly leftovers.


Ingredients

1 tablespoon olive oil

1 pound ground beef

1 small onion, diced

1 packet taco seasoning

8 corn tortillas

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

2 cups enchilada sauce

2 tablespoons fresh cilantro (optional)


Instructions

1. In a skillet, heat olive oil and cook ground beef with diced onion until browned and tender. Drain grease.

2. Stir in taco seasoning with a splash of water and let it simmer for 2–3 minutes until thickened.

3. Warm tortillas in a pan with a bit of oil for 10–15 seconds each side to make them pliable.

4. Preheat oven to 375°F and add a thin layer of enchilada sauce to the bottom of a baking dish.

5. Fill each tortilla with beef mixture and a sprinkle of cheese. Roll and place seam-side down.

6. Pour remaining enchilada sauce over the top and add the rest of the cheese.

7. Bake uncovered for 20 minutes, until cheese is bubbly and golden.

8. Let cool slightly, garnish with chopped cilantro if desired, and serve hot.

Notes

These enchiladas are freezer-friendly — freeze before baking and thaw before use.

You can substitute ground turkey for a leaner version.

Try adding a few spoonfuls of black beans or corn to the filling for extra flavor and texture.
