Ingredients
1 lb ground chicken
2 cloves garlic, minced
1 teaspoon ginger, grated
2 tablespoons soy sauce
2 tablespoons honey
2 tablespoons sriracha
1 tablespoon rice vinegar
1/4 teaspoon red pepper flakes
2 green onions, sliced
2 cups cooked rice or cauliflower rice
1/2 cup shredded carrots
1/2 cup sliced cucumbers
1 tablespoon oil (for cooking)
Salt and pepper to taste
Instructions
1. Heat oil in a skillet over medium heat. Add ground chicken and break it apart. Cook until browned and fully cooked through.
2. Stir in garlic and ginger. Sauté for 1 minute until fragrant.
3. In a small bowl, mix soy sauce, honey, sriracha, rice vinegar, and red pepper flakes.
4. Pour the sauce over the chicken and stir to coat. Simmer for 3-4 minutes until slightly thickened.
5. Assemble bowls with rice or cauliflower rice, firecracker chicken, shredded carrots, cucumbers, and green onions.
6. Drizzle extra sauce over the top and serve hot.
Notes
This recipe can be made with ground turkey or beef.
