Description

This Easy Cake Mix Coffee Cake recipe is the perfect quick-bake dessert, combining a soft, moist yellow cake base with a buttery cinnamon streusel topping. Made with simple pantry ingredients, it’s ideal for breakfast, brunch, or dessert. A cozy and crowd-pleasing coffee cake with cake mix that’s beginner-friendly and always delicious.

Ingredients

1 box yellow cake mix

3 large eggs

1 cup sour cream

1/2 cup vegetable oil

1/2 cup brown sugar

1 tablespoon ground cinnamon

1/4 cup butter melted

1/2 cup powdered sugar (optional glaze)

2 tablespoons milk (optional glaze)

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. In a large mixing bowl, combine the cake mix, eggs, sour cream, and vegetable oil. Mix until the batter is smooth and well blended.

3. In a separate bowl, mix together brown sugar, ground cinnamon, and melted butter until the mixture is crumbly.

4. Pour half of the cake batter into the prepared baking dish and spread evenly.

5. Sprinkle half of the cinnamon streusel mixture over the batter.

6. Add the remaining batter and gently spread it on top. Sprinkle the rest of the streusel over it.

7. Use a butter knife to gently swirl the topping into the batter for a marbled effect.

8. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.

9. Let the cake cool slightly. If using glaze, whisk powdered sugar and milk together until smooth and drizzle over the warm cake before serving.

Notes

Let the cake cool for at least 15 minutes before slicing for cleaner cuts.

You can use melted butter instead of oil for a richer flavor.

Add chopped walnuts or pecans to the streusel for extra crunch.
