Ingredients

4 chicken breasts

1 cup dill pickle juice

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon black pepper

3/4 cup grated parmesan cheese

2 tablespoons olive oil or melted butter

1 tablespoon chopped dill (optional, for garnish)


Instructions

1. Place the chicken breasts in a zip-top bag or shallow dish and pour in the dill pickle juice. Marinate in the fridge for at least 1 hour or overnight.

2. Preheat your oven to 400°F (200°C). Remove the chicken from the marinade and pat dry with paper towels.

3. Mix the garlic powder, onion powder, paprika, and black pepper in a small bowl. Rub onto the chicken evenly.

4. Drizzle chicken with olive oil or melted butter, then press grated parmesan over each piece to coat.

5. Place the chicken on a lined or greased baking dish. Bake for 25–30 minutes until golden and the internal temperature reaches 165°F (75°C).

6. Let the chicken rest for a few minutes. Garnish with fresh dill before serving.

Notes

Marinating overnight gives maximum dill flavor.

Patting the chicken dry helps the parmesan stick and crisp up.

For extra crunch, broil the chicken for 1–2 minutes at the end.
