Description
Easy chicken teriyaki noodles made with juicy chicken, sweet and savory teriyaki sauce, and slurp-worthy noodles. This quick and flavorful dinner is better than takeout and perfect for weeknight meals. Great for meal prep and packed with bold Asian-inspired flavors.
Ingredients
1 lb chicken breast
1/3 cup soy sauce
2 tbsp brown sugar
2 cloves garlic, minced
1 tsp fresh ginger, grated
1 tbsp cornstarch
1 tbsp rice vinegar
1 tsp sesame oil
8 oz lo mein or yakisoba noodles
1 tbsp vegetable oil
1 1/2 cups broccoli florets
1 cup carrots, julienned
2 green onions, sliced
1 tbsp sesame seeds
Instructions
1. Boil the noodles according to package instructions. Drain and set aside. Toss with sesame oil if needed to prevent sticking.
2. In a bowl, whisk soy sauce, brown sugar, garlic, ginger, rice vinegar, and cornstarch to make the teriyaki sauce.
3. Heat vegetable oil in a skillet or wok. Cook sliced chicken breast until golden and fully cooked through. Remove and set aside.
4. In the same pan, sauté broccoli and carrots until tender-crisp, adding a touch more oil if needed.
5. Return chicken to the pan, pour in the teriyaki sauce, and cook until sauce thickens.
6. Add cooked noodles and toss to coat evenly.
7. Garnish with green onions and sesame seeds. Serve hot.
Notes
Use chicken thighs for extra juiciness if you prefer.
Add mushrooms, snap peas, or bell peppers to change up the veggies.
Double the sauce if you like extra glossy noodles.
