Ingredients
1 ½ cups all-purpose flour
2 teaspoons baking powder
2 tablespoons granulated sugar
½ teaspoon salt
1 ½ cups buttermilk
½ cup unsalted butter
1 cup blueberries (fresh or frozen)
Instructions
1. Preheat the oven to 450°F. Place ½ cup (1 stick) of butter in an 8×8-inch baking dish and place in the oven to melt while it heats.
2. In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.
3. If using frozen blueberries, toss them with the dry ingredients now.
4. Pour in the buttermilk and stir gently until just combined. Do not overmix.
5. Fold in the blueberries carefully if not already added.
6. Remove the hot baking dish with melted butter from the oven and pour the dough into it. Spread evenly. The butter should rise around the sides of the dough.
7. Bake for 25 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
8. Let it cool for a few minutes, slice into squares, and serve warm.
