Description

These chewy Dandy Do Cookies are made with peanut butter and oats, creating a soft, rich texture with minimal ingredients. Perfect for gluten-free dessert lovers or quick snack cravings. A no-fuss peanut butter oat cookie recipe you’ll bake again and again.

Ingredients

1 cup old-fashioned oats

1 cup creamy peanut butter

3/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/4 teaspoon salt

Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, mix together the peanut butter, sugar, egg, vanilla, and salt until smooth.

3. Fold in the oats until fully combined.

4. Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them apart.

5. Gently flatten each cookie with a fork if desired.

6. Bake for 10–12 minutes until edges are just golden.

7. Allow cookies to cool on the baking sheet for 3–5 minutes, then transfer to a wire rack.

Notes

Let cookies cool before moving to avoid crumbling.

Use natural peanut butter only if it’s well-mixed and not oily.

For extra fun, add mini chocolate chips to the dough before baking.
