Description

This Crock Pot Rotel Dip recipe is the ultimate cheesy party dip made with Velveeta, ground beef, and Rotel tomatoes. It’s a crowd-pleasing, slow cooker appetizer perfect for game day or casual gatherings. Easy, creamy, and packed with flavor.


Ingredients

1 lb ground beef

16 oz Velveeta cheese

10 oz can Rotel tomatoes with green chilies

Optional: 1 tbsp taco seasoning

Optional: 1/2 cup black beans

Optional: 1/2 cup corn


Instructions

1. Brown the ground beef in a skillet over medium heat until fully cooked, then drain the grease.

2. Cut the Velveeta into cubes and place in the crock pot.

3. Add the browned beef and the full can of Rotel (with juice) to the crock pot.

4. If using taco seasoning, beans, or corn, add them now.

5. Cover and cook on low for 1 to 2 hours, stirring occasionally until fully melted and smooth.

6. Switch to the warm setting and serve directly from the crock pot with your favorite dippers.

Notes

This recipe can be easily doubled for larger crowds.

If the dip thickens after refrigerating, reheat with a splash of milk.

Swap ground beef for sausage, turkey, or meatless crumbles for variation.
