Ingredients
6 cups russet potatoes, peeled and diced
1 cup onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 teaspoon salt
0.5 teaspoon black pepper
8 ounces cream cheese
1 cup milk
1.5 cups shredded cheddar cheese
0.25 cup chopped green onions
0.5 cup cooked bacon, crumbled (optional)
Instructions
1. Peel and dice the russet potatoes, chop onion and garlic.
2. Add potatoes, onion, garlic, chicken broth, salt, and pepper to the crock pot.
3. Cook on low for 6 to 8 hours or on high for 3 to 4 hours until potatoes are soft.
4. Mash some of the potatoes in the crock pot to create a creamy texture.
5. Stir in cream cheese and milk, letting it melt and blend for 10 to 15 minutes.
6. Add shredded cheddar cheese and stir until melted and smooth.
7. Taste and adjust seasoning if needed.
8. Serve hot, garnished with green onions and optional bacon.
Notes
Use Yukon Gold potatoes for a buttery, firmer texture if you prefer.
For a vegetarian version, swap chicken broth with vegetable broth and omit bacon.
