Ingredients
1.5 pounds boneless skinless chicken breasts
3 cloves garlic, minced
1 cup chicken broth
2 tablespoons unsalted butter
2 cups heavy cream
1.5 cups grated Parmesan cheese
3 cups broccoli florets
12 ounces uncooked pasta (fettuccine, penne, or rotini)
1 teaspoon salt
0.5 teaspoon black pepper
Instructions
1. Place the chicken breasts in the bottom of the crock pot. Season with salt and pepper. Add garlic, chicken broth, and butter.
2. Cook on low for 4 to 5 hours, or until the chicken is tender and fully cooked.
3. Shred the chicken with two forks directly in the crock pot.
4. Stir in the heavy cream and Parmesan cheese until smooth and creamy.
5. Add the uncooked pasta and broccoli. Stir to submerge pasta into the sauce.
6. Cook for another 30 to 45 minutes, or until pasta is al dente and broccoli is tender.
7. Stir well and taste. Adjust seasoning as needed. Serve hot.
Notes
Use fresh or frozen broccoli, but add it at the end to avoid mushiness.
Grating your own Parmesan gives a smoother melt and better flavor.
