Ingredients
1 cup fresh corn kernels
1 cup all-purpose flour
1 ½ teaspoons baking powder
1 large egg
⅓ cup milk
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped scallions or chives
2 tablespoons butter or oil for frying
Optional:
¼ cup shredded cheddar cheese
1 minced jalapeño
½ teaspoon smoked paprika
Instructions
1. In a large mixing bowl, combine flour, baking powder, salt, and pepper. Whisk until evenly blended.
2. Add corn kernels and scallions to the bowl. Toss gently to coat with the flour mixture.
3. In a separate bowl, whisk together the egg and milk.
4. Pour the wet ingredients into the dry and stir just until combined. Batter should be thick but scoopable.
5. Heat a nonstick skillet over medium heat and add the butter or oil.
6. Drop spoonfuls of batter into the skillet, gently flattening them into round fritters.
7. Cook for about 3 minutes per side, or until golden and crispy.
8. Transfer fritters to a paper towel-lined plate to drain. Serve warm.
Notes
For extra crispiness, let the batter rest for 5 minutes before frying.
Avoid overcrowding the skillet to ensure even browning.
These fritters are delicious with sour cream, salsa, or hot honey.
