Ingredients

1 lb chicken breast or thighs

1 cup buttermilk

1 cup all-purpose flour

2 tablespoons Cajun seasoning

12 oz fettuccine or penne pasta

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons butter

3 garlic cloves, minced

1 cup corn kernels

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon paprika


Instructions

1. Cut chicken into bite-sized chunks and marinate in buttermilk for 30 minutes.

2. Mix flour with Cajun seasoning, paprika, salt, and pepper. Coat chicken pieces in the mixture.

3. Heat oil in a skillet and fry chicken in batches, cooking 3–4 minutes per side until golden. Drain on paper towels.

4. Toss corn with olive oil, Cajun seasoning, and salt. Roast at 400°F for 15 minutes until charred.

5. In a large skillet, melt butter and sauté garlic for 1–2 minutes. Stir in Cajun seasoning and heavy cream, simmer 4–5 minutes until slightly thickened.

6. Add Parmesan cheese and stir until melted and creamy.

7. Cook pasta according to package instructions. Reserve some pasta water and drain.

8. Combine cooked pasta and Alfredo sauce. Mix in roasted corn.

9. Plate pasta, top with crispy chicken bites, and garnish with parsley or more Parmesan.
